A delicious, gluten free, snack sized savory pancake with tons of flavour and a little crunch.

Ingredients

  • 100g gluten-free flour (rice flour or similar -- Plain flour for non-gluten free)
  • 1 egg
  • 150ml yoghurt
  • 2 teaspoons Galloway Chillies Lime and Ginger
  • 1 bunch spring onions, finely sliced
  • 2 tablespoon chopped coriander
  • 1 tablespoon sesame seeds

For the tzatziki

  • 150g Greek yogurt
  • roughly a five inch cucumber, deseeded and grated
  • 2 tbsp chopped fresh mint

Method

For the Tzatziki :  mix the yoghurt, cucumber and mint together, season to taste, then chill.

The Pancakes... 

Mix the flour, egg, yoghurt and 2 tablespoons of water in a food processor to form a smooth batter.

Tip into a bowl, then stir in the Galloway Chillies Lime and Ginger, spring onions, coriander and sesame seeds. Cover and chill for at least 30 minutes or until required.

Heat a small frying pan with a splash of oil, wiping out excess oil with kitchen paper. Fry the pancake mixture a dessert spoonful at a time, for 1 min on each side, until lightly browned. Place on a plate and keep warm. Top with a dollop of tzatziki and, optionally, a little more Lime & Ginger.
