Chocolate Chilli Cookies with Galloway Chilli Original


  • 200g dark chocolate
  • 300g plain flour
  • 60g raw cocoa powder
  • 2 tsp bicarbonate of soda
  • 1 tsp salt
  • 250g unsalted butter
  • 150g light brown soft sugar
  • 100g caster sugar
  • 2 tsp vanilla extract
  • 200ml extra thick double cream
  • 300g dark chocolate chips
  • 1 heaped tablespoon of Galloway Chilli original
  • For the Drizzle: 100g icing sugar


Preheat the oven to 170c/gas mark 3


  • Break the dark chocolate into pieces, place in a heatproof bowl over a barely simmering pan of water, stirring occasionally until melted
  • Place the flour, cocoa, bicarbonate of soda & salt in a large bowl & mix well
  • In another bowl cream the butter, light brown soft sugar & caster sugar until light & fluffy
  • Add the melted chocolate, vanilla extract & chilli & stir well
  • Beat in the cream then mix in the dry ingredients
  • Finally stir in the chocolate chips
  • Divide mixture evenly on a lined baking sheet
  • Transfer to the oven & bake for 18 minutes
  • Leave the cookies to cool on the baking sheet for 5 minutes then transfer them to a cooling rack to harden as they cool
  • Make the drizzle by mixing the icing sugar with water
  • Drizzle over the cooled cookies & allow to set
