A tasty vegetarian creation incorporating our Galloway Chilli Jam


  • Soft cheese or goat's cheese 
  • 4 yellow and red peppers 
  • 1 red onion 
  • Cherry tomatoes 
  • Galloway Chilli jam
  • Parmesan 
  • Rice 



  • Half 2 peppers and remove seeds, stuff with goat's cheese or soft cheese and top with chilli jam and Parmesan. 
  • Chop up the rest of the peppers and onion into chunks.
  • Place the chopped peppers and onions into a roasting dish along with the whole cherry tomatoes - add a splash of olive oil and to coat the veg.
  • Place the stuffed peppers on top and roast at 180/200 °C for 30-40 minutes. 
  • Giving it a wiggle half way through to stir the veg, cover if needed. 
  • Cook enough rice for 2 people.
