Raspberry Chilli Preserve with the crunch of oats -- a perfect combination.

This easy recipe takes about ten minutes to prepare, plus 35 minutes cooking.  You should be able to cut it into 12 good sized portions.

Raspberry Chilli crumbling Bars made with Galloway Chilli

Ingredients

  • 125g plain flour
  • 85g rolled oats
  • 110g light-brown sugar
  • 110g unsalted butter, softened
  • 250g Galloway Chilli Raspberry
  • 1/4 tsp baking soda
  • 1/4 tsp salt


Directions

  • Preheat oven to 180°C.
  • Line an 8 x 8 inch baking dish with baking paper, leaving a 2-inch overhang of paper on two sides. Grease the inside of the paper.
  • In a large mixing bowl, whisk together flour, baking soda and salt.
  • Stir in oats and brown sugar, breaking up any clumps of sugar.
  • Add butter, and using fingertips, work the butter into the mixture until evenly moistened.
  • Spread half of the mixture into baking tray and press into an even layer.
  • Spread raspberry jam into an even layer over oat layer.
  • Sprinkle top evenly with remaining oat mixture, then lightly press into jam layer.
  • Bake in the preheated oven until golden brown, for about 35 minutes.
  • Remove from oven and allow to cool completely, then lift out of the tray using the excess baking paper. Cut into even slices
