Ingredients

  • slices of bread (nearly stale is ok too)
  • sesame oil to fry
  • 1 egg per person (beaten in bowl with pinch salt & white pepper)
  • Chilli lime and ginger (heat of your choice)

Instructions

  • Melt the chilli lime and ginger by microwaving 8 secs. in micro bowl.
  • Heat oil in frying pan.
  • Add the preserve to beaten egg & seasoning, mixing as added.
  • Proceed to coat bread slices both sides as for eggy bread, fry until golden, serve immediately.

Notes

  • Nice to garnish with fresh coriander leaves.
  • As an added extra you could also put sesame seeds in the egg mix.
