Flat leaf parsley pesto
When I was out and about recently I nipped into see Gordon at Caldwells Veg and purchased a veg box when I was there. One of the items in the box was flat leaf parsley which got me thinking about what to do with it and hence why I made this pesto.
Flat leaf parsley pesto
Ingredients (unless baking I'm not known for measuring accurately and believe it should all be about the taste)
a good handful of flat leaf parsley (I included stalks but I know a lot of people find them bitter to taste)
1/2 a red cayenne chilli
a good glug of Summer Harvest rapeseed oil
2 tablespoons freshly grated parmesan
Method
Put all the ingredients except the oil into the food processor. Whiz for a second or two, add the oil to a consistency that suits. Taste and correct balance of ingredients if required. I added to some pasta for a quick and easy evening meal.
