Chocolate and Chilli -- what's not to like?!

Chocolate Chilli Cookies with Galloway Chilli Original
Ingredients
- 200g dark chocolate
- 300g plain flour
- 60g raw cocoa powder
- 2 tsp bicarbonate of soda
- 1 tsp salt
- 250g unsalted butter
- 150g light brown soft sugar
- 100g caster sugar
- 2 tsp vanilla extract
- 200ml extra thick double cream
- 300g dark chocolate chips
- 1 heaped tablespoon of Galloway Chilli original
- For the Drizzle: 100g icing sugar
Preheat the oven to 170c/gas mark 3
Method
- Break the dark chocolate into pieces, place in a heatproof bowl over a barely simmering pan of water, stirring occasionally until melted
- Place the flour, cocoa, bicarbonate of soda & salt in a large bowl & mix well
- In another bowl cream the butter, light brown soft sugar & caster sugar until light & fluffy
- Add the melted chocolate, vanilla extract & chilli & stir well
- Beat in the cream then mix in the dry ingredients
- Finally stir in the chocolate chips
- Divide mixture evenly on a lined baking sheet
- Transfer to the oven & bake for 18 minutes
- Leave the cookies to cool on the baking sheet for 5 minutes then transfer them to a cooling rack to harden as they cool
- Make the drizzle by mixing the icing sugar with water
- Drizzle over the cooled cookies & allow to set
