A tasty vegetarian creation incorporating our Galloway Chilli Jam
Ingredients
- Soft cheese or goat's cheese
- 4 yellow and red peppers
- 1 red onion
- Cherry tomatoes
- Galloway Chilli jam
- Parmesan
- Rice
Method
- Half 2 peppers and remove seeds, stuff with goat's cheese or soft cheese and top with chilli jam and Parmesan.
- Chop up the rest of the peppers and onion into chunks.
- Place the chopped peppers and onions into a roasting dish along with the whole cherry tomatoes - add a splash of olive oil and to coat the veg.
- Place the stuffed peppers on top and roast at 180/200 °C for 30-40 minutes.
- Giving it a wiggle half way through to stir the veg, cover if needed.
- Cook enough rice for 2 people.
